Swine Flu? Smiley64, you and your friends should not concern yourselves with Swine Flu at all, maybe until next winter.
As for resorts, if you are looking at All Inclusive resorts as a first option, I recommend the following:
Riu Cancun - close to the clubs, great shopping, restaurants, and most rooms have ocean views that are unobstructed. If you and your friends want a more high end resort, the Riu Palace Las Americas is next door to the Riu Cancun, and you can use all the facilities at both. The Riu Caribe is a good choice, but it gets a little quiet at night and is probably better suited for families with children in my opinion. The good thing about the Riu Cancun and the RPLA being next door is that there is an on-site disco and a sports bar open 24 hours at the Riu Cancun. If both resorts are a little much and you are looking for a lower cost option that is close by, you should consider the Presidente Intercontinental.
Presidente Intercontinental - this resort is a bit older, rooms don't have balconies, but it has a wonderful stretch of beachfront, probably one of the best in Cancun. It is a lower price property with a great on-site restaurant El Caribeño, gourmet coffee shop, large pool and small gym. The hotel gets really quiet at night, so you will definitely want to venture out.
Dreams Resort - Cancun's only resort with an on-site dolphin swim experience and beachfront on both the Bay of Isla Mujeres and Caribbean sides.
NH Krystal - Cancun's only dine around option for all inclusive allows guests to eat at restaurants that participate. In this way, if you get tired of the resort's food, you can venture off site to eat elsewhere. The beach faces the Caribbean, is a little small, however the pool is large and makes up for the beachfront in my opinion. I also found that this place tends to attract more singles than at other resorts.
Flamingo Resort - this is an older hotel, offering good food and rooms with balconies. The location is fabulous, right across the street from the Flamingo mall, home of Pat O'Brien's, Margaritaville, Outback Steakhouse and several other restaurants and shops. The difference between this moderate priced hotel in comparison to several of the others I have mentioned is that this one is on the Caribbean Side of the Hotel Zone, while the others are facing the Bay of Isla Mujeres. The hotel's bar area tends to be quite lively between 5-8 pm, and then there is always the entertainment options across the street, making this a convenient resort.
Barcelo Tucancun - a bit more expensive than the Flamingo, but certainly you get more for the dinero as far as newer rooms, quality of decor and better pools.
One of the choices that you should consider is the Gran Melia. This resort offers guests the opportunity to purchase their all inclusive option, on the morning of the days they would like to have it. In this way, if you plan to take a tour that will have you away from the resort for most of the day, you will not feel bad about wasting your all inclusive money when you're not there to use the resort facilities.
Before I go into this topic, have you decided that you definitely want to stay at an all inclusive resort? The reason I ask is because for the same money you would spend at an AI, you could stay at a much higher quality European Plan resort. Of course this means you would have to pay for your food and beverages when you want them. I prefer to go this way because I enjoy dining out in Cancun, as there are SO many incredible restaurants to choose from.

NH Krystal
Hilton Golf & Spa Resort
Fiesta Americana Condesa
Marriott CasaMagna
GR Solaris (Royal Solaris is the sister resort) - these resorts, like the Gran Melia, NH Krystal, Flamingo, Barcelo Tucancun and Presidente Intercontinental as I mentioned above, offers both EP and AI plan.
