Stayed at the hotel from Dec 18th to 23rd and Fiesta Americana Aqua from 23rd to 28th. Le Meridien - Pretty standard, had a room with balcony and ocean view. Beds were soft enough, and service was a little slow which was understandable given the high season. However, pool service was way too slow and seemed to be understaffed. It's very true about the costs... but you get what you pay for, especially in Cancun. Imagine yourself not in Mexico and you won't be that surprised. It's not that hard to do since there's a McD's, Pizza Hut, Papa John's, etc. on ever corner.
If you are debating between this or the Fiesta Aqua (which is absolutely gorgeous, has best location, facilities almost complete) I would pass on this one and pay the same or even less at the Fiesta Aqua which was half the price than the Le Meridien for a better room with better view from higher level.
All in all though, Le Meridien is a fine hotel. For a bite to eat w/o going very far from the hotel, Faro's is a nice enough place with great service and great selection of fresh oysters.
